While specializing in simple pasta dishes, he also engages in a wide range of Western cuisine, from French to Italian, using ingredients from Kyushu. While utilizing his own sensibility, he always remembers to respect history and tradition, and is constantly researching traditional cooking methods, the foundation of the culinary world.
